The environmental impacts associated with catching and farming fish commercially affect the health of our oceans, fisheries, communities and economies around the world. Sourcing seasonal fish means the fish are abundant and good quality. It's the way to sustain healthy fish stocks.

We are passionate about sourcing the very best local ingredients for our guests but we also want to ensure we do this in a sustainable way to ensure sea stocks are maintained for generations to come. We work closely with our supplier to avoid buying fish during their spawning season, allowing species to breed and replenish their populations.

To meet the high numbers of seafood that we serve at the majority of our fish is sourced through Direct Seafoods in Colchester, one of the largest fish suppliers in the UK. Their main aim is to ensure quality and well managed fish stocks in the UK & foreign seas. Direct Seafood work with local fishermen and purchase and prepare the fish on behalf of the Brudenell hotel.

They source all the fish responsibly and passionately believe in promoting the most sustainable products available. They work closely the local fishermen and have links with organisations such as the Marine Stewardship Council (MSC) to develop and market sustainable alternatives. They only transport fish across the country if it cannot be sourced locally, reducing food miles and our carbon footprint.

Shellfish
Often when a species is sourced from the sea the species is frozen instantly to ensure a longer shelf life to meet the demand.

Freezing shellfish on the boat as soon as they are caught allows the fishermen to ensure stocks are not depleted behind breeding levels, and allowing them to sell the fish longer for the freedom to enjoy species regardless of the seasons. (Modern freezing techniques maintain consistent product quality and may even provide a better quality than unfrozen fish in some cases).

Shellfish such as prawns are ordered frozen—even the best restaurants in the world often use frozen product. This is because trawlers stay out at sea for long periods of time, until they have caught their quotas or filled their holds, and they immediately freeze their catch so it won’t spoil.

It makes it unlikely that you will buy fresh wild prawns. Rather, any unfrozen wild prawns that you buy will already have been defrosted, which means you should not freeze them again. My advice is that if you aren’t going to eat the prawns straight away, buy them frozen and then defrost them yourself—you will end up with a much fresher product.
Did you ever wonder where the real flavor of a shellfish is hidden? It is in the head and shell and blossoms during cooking. If you’ve ever eaten our shellfish bisque you will have experienced the flavour potential of crustacean shells.

Our classic fruit de Mer currently features a wide range of sustainably sourced shellfish such as King Crab claws from the N.E Atlantic, Prawns from Pinney’s of Orford, Aldeburgh Crab and Harwich Lobster.

We keep update with overall seafood market updates and as the weather forecast still looks good there is lots of day boat activity which means a continued quality summer fishing season with high stocks of sardines, mackerel, bream and tuna.

Mussels, clams and lobsters struggle with the warmer weather in the south so sourcing from Scotland offers a better quality.

For August Wild Black bream is very scares and therefore gilthead bream offers great value and quality. Hake is currently in good availability and value in the South West. Cornish Sardines are also great quality and value. If you spot any Chilean sourced swordfish there have been great reviews in the market.

Aldeburgh Carnival

The 72nd Aldeburgh Carnival is just two days away and will see a weekend of plentiful entertainment and family fun here of the Suffolk coast.

The three day event, starting this Saturday, has a rich and varied itinerary of events. From the steam-driven ‘Galloper Ride’ to Sunday’s 10k ‘Mini Marathon’, there is plenty to do and enjoy for all ages. The Carnival Village in particular will be hosting activities for kids, including the ever popular Punch and Judy shows, along with Children’s Land Sports and a classic Egg Boat Race.

The carnival will come to close in some style this year and is undoubtedly the pinnacle of the weekend. Monday 18th August will start with swimming races in the sea, followed by a live ‘Lifeboat Launch’ demonstration by the Sea and Air Rescue Team, with The Military Band performing outside Moot Hall later on in the afternoon before the Carnival Queen is officially crowned in the evening.

Make sure you don’t miss the incredible and unique Chinese Lantern Procession to the beach, which is followed by the grand finale – the firework display! To find out more about all the events over the weekend, Carnival Programmes are on sale across the town for just £2.

Taking place on the weekend of the 27th and 28th September, in the stunning surrounds of Snape Maltings, the festival will welcome highly-regarded local and celebrity chefs as they celebrate the fantastic reputation our county has for quality produce and gastronomy. With free cookery demonstrations, market stalls, food stands, quirky events (including the Adams World Pickled Egg Championships!) alongside much more, this is a unique occasion for the whole family to enjoy.

This year’s high-profile guests include TV chef Valentine Warner, Sam and Sam Clarke of Moro and Morito, Marcus Verbene from Roast in London, 2013 Masterchef Winner Natalie Coleman, Jane Baxter, author of the new Leon Fast Veg cookbook and Michelin-starred Galton Blackiston from Morston Hall in Norfolk. With over 80 food and drink producers also attending, many of whom are based just a stone’s throw away from Aldeburgh, visitors are free to browse and purchase a fine selection of Suffolk’s produce, from organic vegetables and milk to breads, beers, and street food.

A trip to the beach is a great way to spend quality time with your loved ones in the summer months, but it’s not always as easy as hopping in your car and driving to your favourite spot, especially if you have children. Here are our top 10 items we think are essential to have a pleasant and relaxing time on the Aldebugh coastline, whilst being comfortable and safe.

Summer just wouldn’t be the same without a trip to the beach, would it?

1. Sun Cream
The most important item. Even though the British weather isn’t known for being particularly hot, the sun is still powerful enough to cause serious damage to your skin if left unprotected. Apply regularly throughout the day, especially if you enjoy a spot of swimming.
2. Camera
For capturing all of those magical moments and stunning scenery our great coastline has to offer.
3. Book or Magazine
There’s no better place to take time-out and kick back with your favourite read.
4. Flip Flops and Sandals
Easy to forget, but certainly the most ideal footwear for walking along our pebbled beaches, especially if you get tempted to test the temperature of the sea!
5. Sunglasses
Essential for protecting your eyes and feeling comfortable in the glaring sun.
6. Towels
The sea can be a bit a chilly, with the trusty towel often being the saviour for shivering bodies when making the walk back to camp from the water! Also useful for lying on when soaking up the rays.
7. Wind Break
Great for keeping the wind at bay and ideal for maintaining a sense of privacy at the beach, especially when it comes to getting changed.
8. Umbrella
On particularly hot days, a large beach umbrella becomes even more essential when needing to take five out of the glistening sun.
9. Beach Bag
Super handy when it comes to packing everything together.
10. Water
It’s easy to become dehydrated when spending large amounts of time in the sun. Take along plenty of bottled water and keep cool in your beach bag, along with an ice pack or two.

Aldeburgh Food and Drink Festival
The Festival takes place during the last weekend in September, in the beautiful setting of Snape Maltings, where reed-covered marshlands stretch into the distance towards Aldeburgh. With 80 food and drink producers from Suffolk, many from just a few miles away, visitors gather year on year to enjoy and buy produce including raw milk, organic vegetables, sourdough bread, award-winning beer and spirits from sponsors Adnams, cyder from Aspall and delicious street-food.

The Festival is family friendly with free tickets for under 12s with free activities for children and cookery workshops.

FolkEast
The third annual FolkEast festival will take place from Friday 15th to Sunday 17th August 2014 at a new location in 300 acres of parkland at Glemham Hall, in Suffolk.

As well as a wide roster of folk music, the festival also offers ceilidhs, Morris teams, song, dance and instrument workshops, sessions, mardling marquees, local ales & fine food as well as a vintage tea tent, storytelling, traditional craft & art stalls and demonstrations, and plenty of opportunities for children and adults alike to join in.

Latitude Festival
The ultimate Suffolk festival returns this year from the 17th until the 20th of July. As well as a comprehensive bill of musicians, bands and artists across four stages - The Obelisk Arena, The BBC Radio 6 Music Stage, The i Arena, and the Huw Stephens curated Lake Stage, the festival comprises elements of theatre, art, comedy, cabaret, poetry, politics, dance and literature.
Headlining acts this year include The Black Keys, Damon Albarn, HAIM, Editors and Two Door Cinema Club, with stand-up comedy from the likes of Dara O Briain, Simon Amstell, Al Murray and Kevin Bridges.

Soul by the Sea
A major date on Suffolk’s coastal calendar, this fantastic open air concert returns to the shores of Aldeburgh after the huge success of 2013’s edition, Sixties by the Sea.

Aldeburgh’s premiere free event celebrates music in all its glory, with a jam-packed schedule of live bands taking to the stage and playing their soulful sounds to punters on the Suffolk coastline. 2014’s line-up on the 5th July includes a fantastic array of soul artists, including headliners Geno Washington and ultimate party band, Soul Kitchen.

Follow in the footsteps of the BBC Springwatch team and visit RSPB Minsmere on Suffolk’s heritage coast. As James will tell you, we are passionate about high quality ingredients here in Aldeburgh, with our restaurant serving the finest locally-sourced produce. And by serving local produce, we are doing our bit to support the local community, fishermen and suppliers who have worked so hard to give Suffolk the fantastic reputation is has for incredible food. Meeting these people is just as important, and helps us understand the dedication put in to providing restaurants such ours with the best ingredients.

We recently spent the day catching lobsters near Harwich, a quick pit-stop at Mersea Island to meet The Company Shed and a tour with owner Richard Howard, with our journey finally ending in Colchester, where we got up close with Direct Seafoods to see how they collect and prepare our ingredients from the open waters. Here’s what James had to say:

“I really enjoy the days out of the kitchen when I can meet the local fisherman and learn more about the journey of our produce. Working with Direct Seafoods means we ensure the best & freshest fish is served to our guests in a sustainable manner from local fishermen.”

RSPB Minsmere to host BBC Springwatch!

The BBC's popular wildlife programme, Springwatch, has found a new home here on the Suffolk coast at Minsmere Nature Reserve, a short distance from our hotel! The new three-week series will launch on May 26th.

The beautiful RSPB Minsmere Nature Reserve is one of the richest areas for wildlife in the UK with over 5,600 species taking residence. Speaking to the BBC, Reserve manager Adam Rowlands stated that viewers are in for a “jam-packed series”, due to the site’s rich biodiversity.

Wildlife specialists have been planting cameras throughout the site over the past weeks, with specially built hideouts and high-reed screens also deployed to keep the BBC camera crew out of site. The new series will focus in and around the nests of avocets, terns, oystercatchers and lapwings, with real-time updates as mothers endeavour to protect their young from predatory rivals. The reserve’s badger family will play the lead role in the high anticipated return of night vision mode!

Legendary nature-man, Bill Oddie, returns to the show as it celebrates its 10th anniversary, alongside presenters Chris Packham, Michaela Strachan and Martin Hughes-Games.

Make sure you tune into BBC Two at 8:00pm on Monday to Thursday, from May 26th to June 12th to catch an insight into the magical wildlife our coast has to offer.
