We are delighted to announce the promotion of Mark to sous chef at our seafood restaurant in Suffolk. He comes into the role with two years already behind him at the TA Hotel Collection, and a wealth of experience gained around the country, from Milton Keynes, Northampton, Chilham Village and Colchester, to here in Aldeburgh.

Very much stumbling into the cheffing world, Mark began his catering life as barman, and by chance covered a kitchen shift during his times at Yate’s Wine Lodge. It was during this shift when he discovered his passion for food. Never looking back, Mark has since furthered his dedication to cookery, working in prestigious kitchens across East Anglia and further afield. Now firmly part of the team here at The Brudenell, we look forward to the years ahead with him on board.

Mark’s top tips for Christmas cooking:

- Try making your own cranberry sauce. A good sauce can elevate a dish, and are also easy to make at home. Cranberries are easy to source from local producers or major supermarkets - fresh, dried or frozen. Depending on how creative you are feeling, you could even make a jelly or puree.

- When cooking meat this Christmas, the most important thing to consider is cooking on a lower heat, for a longer period of time. Also make sure that when taking the meat out of the oven that you cover it straight away with kitchen foil, and leave it to rest for a third to nearly half of the cooking time. This ensures that the meat avoids tightening up; resulting in delicious, tender main ingredient.

- To make delicious gravy, include leftover bones, spare meat, or carcasses in the cooking pot. If you struggle to find something suitable or simply don’t have anything available, ask your local butcher who will happily provide you with what you’re looking for.

- For the perfect roast potatoes, first roast them on a bed of salt in the oven at 200 degrees. Once softened and the skin has dried, remove the skin, resulting in fluffy white spuds. Return the newly skinned potatoes to the oven on the same heat, but this time with animal fat or oil, and watch until perfectly crisp.

- Finally, don’t overcook your sprouts!

Amongst a sea of deep orange and brown, autumn is a beautiful time of year to embrace the great outdoors. Vivid outbursts of colour cover the countryside, as vast arrays of wildlife sets itself for weeks of migration and hibernation over the winter months.

Our long summer with continued warm weather has paved the way for another mild autumn, making an even greater opportunity for you to enjoy all that Aldeburgh and the stunning surrounding area has to offer. Here are a few highlights which we think you should try out on your next visit:

The Aldeburgh Museum at Moot Hall
Aldeburgh has a long a fascinating history dating back to the Romans and Anglo-Saxons. Excavations in the area have uncovered hordes of Romano-British pottery, along with evidence of a later Saxon settlement at Barber’s Point, situated on the North Bank of nearby River Alde.

Aldeburgh Museum traces the history of our proud part of Suffolk, situated in Moot Hall, one of the most important timber-framed public buildings in the country. It provides an insight through the ages and is a must-see for those who want to relive the history and heritage of our famous seaside town.

Britten Trail
Created by the people of Aldeburgh and Snape, the Britten Trail celebrates the life of acclaimed composer and local hero, Benjamin Britten.

Exploring the community from which he was such a prominent part, the trail takes walkers across a variety of locations including Jubilee Hall, Aldeburgh Parish Church and Maggi Hamdling’s seaside tribute ‘The Scallop’, proudly placed on Aldeburgh beach. Free maps are widely available throughout town.

Orford Castle
Staying outdoors and with the heritage of the area, Orford Castle is a landmark in itself, standing tall and overlooking surrounding villages. Argued to be one of England’s most complete and unusual keeps, this 12th century military stronghold boast 800 years of history with hidden passageways and secret chambers.

Visitors can enjoy a fun and insightful family day out with opportunities for children to explore and use their imaginations. Audio guides are available throughout the year; watch out for the basement well!

A Taste of Brazil

The World Cup was of course a disappointment for those who followed England, but despite the failings on the pitch, it was hard to not be consumed by the energy and lively party atmospheres the host nation created. Our TV screens were consumed for weeks by the bright colours of Brazil and the competing nations, with thousands of people packing stadiums and beaches across the full breadth of the vast South American country.

We too will be experiencing and celebrating our own taste of Brazlian culture as the second Flipside Festival takes place this October. From Rio to Suffolk, flavours of Brazil will be right here on our doorstep as the three day event hosts literary talks, live music and cookery demonstrations, alongside capoeira and of course, football! On the festival Sunday, Street Child United will be bringing the World Cup atmosphere back to East Anglia for the first ever Flipside and Street Child United 5-a-side tournament. With junior and adult competitions which are open to all, festival goers will be able to show their skills whilst raising money for a very good cause.

Flipside Festival takes place on the 3rd – 5th October at Snape Maltings, the home of Aldeburgh Music. With highlights including a scintillating double bill opening night party with Gilles Peterson and Da Lata, visitors are sure to be in for a real Latino blast! Saturday night headliner Bebe Gilberto, the multi-Grammy-nominated singer songwriter also stars in a rare UK appearance, with writers Colm Tolbin, Sally Gardner and Benjamin Zephaniah amongst the leading literary names.

The environmental impacts associated with catching and farming fish commercially affect the health of our oceans, fisheries, communities and economies around the world. Sourcing seasonal fish means the fish are abundant and good quality. It's the way to sustain healthy fish stocks.

We are passionate about sourcing the very best local ingredients for our guests but we also want to ensure we do this in a sustainable way to ensure sea stocks are maintained for generations to come. We work closely with our supplier to avoid buying fish during their spawning season, allowing species to breed and replenish their populations.

To meet the high numbers of seafood that we serve at the majority of our fish is sourced through Direct Seafoods in Colchester, one of the largest fish suppliers in the UK. Their main aim is to ensure quality and well managed fish stocks in the UK & foreign seas. Direct Seafood work with local fishermen and purchase and prepare the fish on behalf of the Brudenell hotel.

They source all the fish responsibly and passionately believe in promoting the most sustainable products available. They work closely the local fishermen and have links with organisations such as the Marine Stewardship Council (MSC) to develop and market sustainable alternatives. They only transport fish across the country if it cannot be sourced locally, reducing food miles and our carbon footprint.

Often when a species is sourced from the sea the species is frozen instantly to ensure a longer shelf life to meet the demand.

Freezing shellfish on the boat as soon as they are caught allows the fishermen to ensure stocks are not depleted behind breeding levels, and allowing them to sell the fish longer for the freedom to enjoy species regardless of the seasons. (Modern freezing techniques maintain consistent product quality and may even provide a better quality than unfrozen fish in some cases).

Shellfish such as prawns are ordered frozen—even the best restaurants in the world often use frozen product. This is because trawlers stay out at sea for long periods of time, until they have caught their quotas or filled their holds, and they immediately freeze their catch so it won’t spoil.

It makes it unlikely that you will buy fresh wild prawns. Rather, any unfrozen wild prawns that you buy will already have been defrosted, which means you should not freeze them again. My advice is that if you aren’t going to eat the prawns straight away, buy them frozen and then defrost them yourself—you will end up with a much fresher product.
Did you ever wonder where the real flavor of a shellfish is hidden? It is in the head and shell and blossoms during cooking. If you’ve ever eaten our shellfish bisque you will have experienced the flavour potential of crustacean shells.

Our classic fruit de Mer currently features a wide range of sustainably sourced shellfish such as King Crab claws from the N.E Atlantic, Prawns from Pinney’s of Orford, Aldeburgh Crab and Harwich Lobster.

We keep update with overall seafood market updates and as the weather forecast still looks good there is lots of day boat activity which means a continued quality summer fishing season with high stocks of sardines, mackerel, bream and tuna.

Mussels, clams and lobsters struggle with the warmer weather in the south so sourcing from Scotland offers a better quality.

For August Wild Black bream is very scares and therefore gilthead bream offers great value and quality. Hake is currently in good availability and value in the South West. Cornish Sardines are also great quality and value. If you spot any Chilean sourced swordfish there have been great reviews in the market.

Aldeburgh Carnival

The 72nd Aldeburgh Carnival is just two days away and will see a weekend of plentiful entertainment and family fun here of the Suffolk coast.

The three day event, starting this Saturday, has a rich and varied itinerary of events. From the steam-driven ‘Galloper Ride’ to Sunday’s 10k ‘Mini Marathon’, there is plenty to do and enjoy for all ages. The Carnival Village in particular will be hosting activities for kids, including the ever popular Punch and Judy shows, along with Children’s Land Sports and a classic Egg Boat Race.

The carnival will come to close in some style this year and is undoubtedly the pinnacle of the weekend. Monday 18th August will start with swimming races in the sea, followed by a live ‘Lifeboat Launch’ demonstration by the Sea and Air Rescue Team, with The Military Band performing outside Moot Hall later on in the afternoon before the Carnival Queen is officially crowned in the evening.

Make sure you don’t miss the incredible and unique Chinese Lantern Procession to the beach, which is followed by the grand finale – the firework display! To find out more about all the events over the weekend, Carnival Programmes are on sale across the town for just £2.

Taking place on the weekend of the 27th and 28th September, in the stunning surrounds of Snape Maltings, the festival will welcome highly-regarded local and celebrity chefs as they celebrate the fantastic reputation our county has for quality produce and gastronomy. With free cookery demonstrations, market stalls, food stands, quirky events (including the Adams World Pickled Egg Championships!) alongside much more, this is a unique occasion for the whole family to enjoy.

This year’s high-profile guests include TV chef Valentine Warner, Sam and Sam Clarke of Moro and Morito, Marcus Verbene from Roast in London, 2013 Masterchef Winner Natalie Coleman, Jane Baxter, author of the new Leon Fast Veg cookbook and Michelin-starred Galton Blackiston from Morston Hall in Norfolk. With over 80 food and drink producers also attending, many of whom are based just a stone’s throw away from Aldeburgh, visitors are free to browse and purchase a fine selection of Suffolk’s produce, from organic vegetables and milk to breads, beers, and street food.
