Our Head Chef at the Brudenell is Ben Hegarty, here we catch up with Ben & ask him about what inspires him & his secret passion for coleslaw & crisp sandwiches!
Hi Ben, how long have you worked at the Brudenell?
I’ve worked within the TA Hotel Collection Group for 9 years & specifically at the Brudenell for just over 2 years.
When did your interest in cooking begin?
It really started when I was around 10-12 years old cooking with my granddad. Then Jamie Oliver burst onto the scene & made cooking cool so I was hooked!
How long have you been a chef?
I’ve been cheffing for 16 years.
Best bit of the job
For me the best bit is being creative with food, & seeing people love & enjoy eating the food I cook. I also love training younger chefs & watching them increase in confidence.
Who or what are you inspired by?
I’m inspired by great chefs in the industry.
Best thing about working at the Brudenell?
Best bit of working at the Brudenell is being more focused & being creative with seafood & fish. We’re so lucky to have wonderful local suppliers right on our doorstep.
What is your foodie guilty pleasure?
A bit embarrassing but my guilty pleasure is coleslaw & crisps sandwiches lol.
What would you be doing if you weren’t a chef?
I’d be a tattoo artist or food journalist, I have creative tendencies!
Favourite thing to do in your free time?
I’m passionate about photography, spending time with my family, watching movies & taking relaxing walks with my sausage dog Mushroom!
